Lipid metabolism expert | Role of animal derived foods on human health | | | The principle duties of Kevin Shingfield (MTT Agrifood Research, Finland) include overall management of financial and scientific resources of the Lipid Metabolism group at MTT Agrifood Research Finland that is focused on establishing and delivering on National and International research programmes examining the role of animal-derived foods on human health. Research is directed towards developing sustainable nutritional strategies for enhancing the quality of animal-derived foods, ruminant products in particular, which involves studies of ruminal biohydrogenation, transportation of absorbed fatty acids and lipid metabolism in adipose tissue and the mammary gland. Research activities in the future will be focused on examining the key role of lipids on lipogenic gene expression and providing a more comprehensive understanding of gene responses to nutrients in productive livestock species.
